Springy Spring Salad

Serves 6

Spring SaladDressing (put all ingredients in a bowl and whisk away)

  • 2 Tbs. extra virgin olive oil, plus more for drizzling
  • ½ cup fresh orange juice
  • 1 large shallot, finely chopped
  • 3 Tbs. olive oil
  • 2 Tbs. sherry vinegar
  • 2 tsp. Dijon mustard
  • 1 tsp. raw honey

Salad (then put spinach in a bowl with this other stuff, then toss it all with the dressing you just made. Easy peasy!)

  • 3 navel oranges, pith removed and sliced
  • 10 cups baby spinach (9 oz.)
  • a bunch of sliced radishes
  • 3 avocados, peeled and sliced
  • ¼ cup pumpkin seeds or sunflower seeds, raw or toasted
  • salt and pepper to taste
